Preparation
- Heat oven 425F
- Cut and clean and dice 2 Roma tomatoes drizzle with olive oil, salt and pepper.
- Roast in oven for 20 minutes until soft and charred in spots. Remove from oven and set aside.
- Dutch oven heat medium high heat with butter and oil and add carrots, celery and onion. Sauté until tender, about 5 minutes.
- Add garlic and continue cooking for 1 minute.
- Add beef and sausage using potatoes masher to combine and add all additional ingredients.
- Stir to combine and simmer for the afternoon.
- Remove bay leaf.
- Serve with fresh pasta, garlic bread and green beans.
