Fried Rice

I have tried making fried rice for two several times without success (always ending up with way too much rice).  This is the first and best fried rice recipe that has delivered on flavor while actually making a serving for two. If desired, cooked meat can be added to the the rice such as diced ham, shredded chicken or small shrimp.

Matches well with the Beef Satay recipe.

Ingredients
2ozBasmati Rice
1 1/4CupsChicken Stock
1/4tspSesame Oil
1/4tspButter
1TblVegetable Oil
1 1/2TblsCarrot (diced)
2TblsRed Bell Pepper (diced)
2TblsOnion (slivered)
1cloveGarlic (minced)
1tspGinger Paste
1wholeEgg (beaten)
2TblsSoy Sauce
1tspHoisin
2TblsFrozen Peas
1wholeGreen Onion/Scallion (thinly sliced on bias)
1 1/2tspsToasted Sesame Seeds
Preparation
  1. Using rice cooker make rice with the rice, chicken broth, sesame oil and butter.
  2. Spread rice out on a sheet pan to cool and dry out a bit
  3. In a wok or pan, heat vegetable oil over medium/medium high heat.
  4. Add carrots, red bell pepper and onion to the pan and sauté until tender crisp and slightly charred.
  5. Add garlic and ginger and sauté for 30 seconds.
  6. Push vegetables to the side and add an additional 2 teaspoons of oil and pour in beaten egg, breaking it up as it fries.
  7. Mix vegetables and egg together and add in the frozen peas and rice.
  8. Add in the soy sauce and hoisin sauce stirring to combine.
  9. Serve with slivered green onions/scallions and toasted sesame seeds.
