8ozDry Pasta (or 6 oz fresh homemade pasta)
1GSalted Water (gallon of water with 1T kosher salt)

Preparation
- Make fresh homemade pasta and let dry while preparing the carbonara.
- Remove 2 eggs from refrigerator to come to room temperature.
- Fry bacon to desired doneness and reserve for topping the pasta.
- Put three tablespoons of the bacon grease into a shallow pan and gently heat.
- In a large pot using 1gallon of water with 1T water, bring to a boil.
- Grate cheese, we use what ever hard Italian cheese we have in the cheese drawer (Parmesan, Romano, Pecorino or a combination of them).
- Crack eggs into a bowl and add the cheese, salt and pepper and mix to combine.
- Put egg mixture near warm stove where you have the bacon grease and water heating.
- Increase heat on pan with bacon grease to medium.
- Boil pasta. If using fresh it will only take about 2-3 minutes.
- When pasta is cooked remove pasta to the pan with the bacon grease to coat pasta. DO NOT DRAIN PASTA.
- Slowly add one ounce of pasta water a time to the egg mixture to temper it (slowly warming and not cooking the eggs). This usually takes about three ounces of the pasta water.
- Remive the pasta pan from the heat and slowly drizzle in the egg mixture while constantly stirring the pasta. This is much easier with two people, one stirring the pasta and one drizzling the egg mixture.
- If the sauce gets too thick, add a little more pasta water to thin it.
- Serve with bacon and additional grated cheese.
