A favorite from our Cooking Light 5 Ingredient 15 Minute cook book given to me by my mother-in-law many years ago. We make cheese with sliced green onion quesadillas or pepper jack cheese and green onion grilled cheese to go with the soup.
Ingredients
6ozKielbasa (sliced into bite sized pieces Or 2 Johsonville Kielbasa , cut into bite sized pieces)
1CupBell Pepper (diced)
2CupsChicken Stock/Broth
15ozBlack Beans (drained and rinsed)
1/4cSalsa Or Picante Sauce
CilantroLeaves
1CupBell Pepper (diced)

Preparation
- Spray pot with non-stick spray and place over medium high heat and sauté kielbasa until it begins to brown.
- Add the chopped bell pepper and cook for 1 minute.
- Add stock/broth and bring to a boil.
- Reduce heat to low simmer and add black beans and salsa/picante sauce and simmer for 5 minutes.
- Serve with fresh cilantro leaves and quesadillas or grilled cheese.
