Prairie Fire Bean Dip

Bean dip ala Don Pablo’s restaurant (which no longer operates in our area). Serve with some homemade tortillas and it almost becomes a meal on its own. One can of chipolte chiles in adobe sauce goes a long ways. Remove the seeds from all the peppers in the can and portion out individual peppers into small zip bags (with some adobe sauce) and freeze for future use.

Ingredients
1ozOnion (finely diced)
1/2wholeJalapeño (finely diced)
1wholeChipotle Chili With Adobo Sauce (finely chopped)
1/4tspGarlic Powder
1/2tspCumin (generous)
1/2TblYogurt
dash ofSalt
11ozRefried Beans
1/4CupShredded Cheese
Preparation
  1. Make refried beans from instant pot recipe.
  2. Make homemade tortilla dough from Rick Bayless recipe, waiting to cook until just prior to serving.
  3. Heat a small amount of oil in small pan over medium heat.(Will later serve from this pan.)
  4. Saute onion and jalapeño until soft but not browned.
  5. Add chipolte pepper and adobo sauce, garlic powder, cumin, salt and stir to combine.
  6. Add refried beans, yogurt and cheese and stir to heat through.
  7. Serve in pan with tortilla chips and flour tortillas.
