Auntie Pat’s Ginger Cookies

This is a recipe that I got from my Auntie Pat.  It is a favorite cookie and great for Thanksgiving and Christmas.

Ingredients
1cShortening Or Butter Or Combination
1cSugar
1egg
4TblsMolasses (can combine some honey with the molasses to total 4T)
2 1/2CupsFlour
2tspsBaking Soda
1/2tspSalt
2tspsCinnamon
2tspsGinger
OptionalLemon Extract If Making With The Honey
Preparation
  1. Preheat oven to 350F.
  2. Cream together the shortening/butter, sugar and egg.
  3. Add the molasses and combine.
  4. Sift together: flour, baking soda, salt, cinnamon and ginger and add to the creamed ingredients.
  5. Roll into 1 inch balls and flatten wtih the bottom of a glass dipped in sugar on parchment lined baking sheets.
  6. Bake for 8 to 10 minutes,
  7. Remove to a cooling rack.
