This is a recipe that I got from my Auntie Pat. It is a favorite cookie and great for Thanksgiving and Christmas.
Ingredients
1cShortening Or Butter Or Combination
1cSugar
1egg
4TblsMolasses (can combine some honey with the molasses to total 4T)
2 1/2CupsFlour
2tspsBaking Soda
1/2tspSalt
2tspsCinnamon
2tspsGinger
OptionalLemon Extract If Making With The Honey

Preparation
- Preheat oven to 350F.
- Cream together the shortening/butter, sugar and egg.
- Add the molasses and combine.
- Sift together: flour, baking soda, salt, cinnamon and ginger and add to the creamed ingredients.
- Roll into 1 inch balls and flatten wtih the bottom of a glass dipped in sugar on parchment lined baking sheets.
- Bake for 8 to 10 minutes,
- Remove to a cooling rack.
