Deep Fried Beer Battered Cod

We have tried and tried many times to make beer battered deep fried fish, but with limited success, until we made this recipe!  I used to leave the last piece of fish as it was not my favorite, now you will have to fight me for that last piece.  I also make a homemade tartar sauce and frozen plank French fries.

Ingredients
2/3lbCod Filet
5 0.3ozCrisp Fried Powder Mix (purchased from Asian market —- it has corn starch , wheat flour , rice starch and baking powder)
1BottleDark Beer (very cold)
1/2tspGarlic Powder
1/2tspSmokey Paprika
1/2tspWhite Pepper (ground)
1/2ozAP Flour (by weight)
Preparation
  1. Preheat deep fryer to 370F.
  2. Divide crisp fried powder mix into two containers, one wtih 1.5oz (weight) and the rest into a bowl.
  3. To the 1.5 oz add the seasonings; garlic powder, smokey paprika and ground white pepper and 1/2oz AP flour.
  4. Rinse and pat thoroughly dry the fish, We actually put the filet on a wire rack and place it in front of a small fan to dry it.
  5. Portion filet into pieces that have similar sizes.
  6. Preheat oven to 225F with baking sheet with a cooling rack on it.
  7. To the bowl with the crisp fried powder mix add in small amounts of beer (6oz approximately) until batter is consistency of a thick pancake batter.
  8. Dredge fish in the seasoned powder mix and then into the batter.  Place on a wire rack.
  9. Redredge in the batter (if you do not have enough batter, add some of the seasoned mix and additional beer to get back to the thick pancake batter consistently) and slowly drop into the hot oil.  Working in batches of 3 or 4 fillets that are similar sized.  Do not over crowd the deep fryer.  
  10. Cook approximately 4 minutes until GBD (golden brown and delicious).
  11. Remove to a plate with a paper towel on it to briefly drain and then transfer to the lined baking sheet in the oven while cooking the rest of the fish.  
  12. Serve with French fries, tartar sauce and malt vinegar.
