Edamame-Miso Grilled Tuna Sandwich

Found this recipe when looking for recipes that use miso.  We served it with a miso and tofu soup and sesame rice crackers.

Ingredients
1(4-oz.)canTuna (drained)
1⁄4cupShelled Edamame
11TblsSesame Oil
1/2TblChili Oil
11tspsWhite Miso
2greenOnions (minced)
1smallRed Chili (minced)
1/4tspFreshly Ground Black Pepper
2TblsMayonnaise
3TblsButter (melted)
2slicesPepper Jack Cheese
4slicesBread
slicesToasted Country Bread (for serving)
Preparation
  1. Mix together drained tuna, edamame, sesame and chili oils, miso, green onions, red chili, pepper and mayonnaise.
  2. Melt butter and brush on one side of each piece of bread.
  3. Heat griddle on medium heat,
  4. Assemble sandwiches with unbuttered side of bread with half the tuna salad and one slice of cheese, top with second slice of bread, butter side out,
  5. Put on heated griddle and toast until golden brown and flip and toast until second side is golden brown.
  6. Serve with miso soup and extra edamame or sesame rice crackers.
