Beef Satay

This recipe is a mash-up of three different recipes with things that we had in hand.

Ingredients
1/2lbsSkirt Steak
Marinade:
1TblFish Sauce
1TblSoy Sauce
2TblsVegetable Oil
1 1/2tspsHot Sauce (chalula or franks)
1TblBrown Sugar
1TblCilantro (minced)
1cloveGarlic (minced)
1wholeGreen Onion/Scallion (chopped)
1tspGinger Paste
1tspCumin
pinch ofSalt
1/4tspBlack Pepper (ground)
1 1/2tspsLime Juice
Peanut Sauce:
1/4CupCreamy Peanut Butter
1/8CupHot Water
1TblLime Juice
1TblHot Sauce
1tspChili Garlic Sauce
1 1/2tspsBrown Sugar
1 1/2tspsFish Sauce
1cloveGarlic (minced)
1 1/2TblsCilantro (chopped)
1wholeGreen Onion/Scallion (chopped)
Preparation

To make marinade:

  1. Mix all marinade ingredients with a stick blender and put in container with beef.  Refrigerate at least one hour up to 4 hours.
  2. If using a flank or other thicker steak, cut steak into thin strips before putting in the marinade.

To make peanut sauce:

  1. Mix all sauce ingredients with a stick blender until creamy and refrigerate.

Dinner preparation:

  1. Prepare and heat grill to medium heat.
  2. If using strips of steak, remive from marinade, spray skewers (metal) with non-stick spray and weave the meat onto the skewers.
  3. Grill meat for 3 minutes per side.
  4. Remive meat from skewers onto a platter.
  5. Serve with peanut sauce and fried rice.
