This recipe makes many, many meatballs, but they are oh so good!  We use these meatballs in the all day spaghetti sauce and make meatball sandwiches.

This is a basic risotto recipe that produces consistently tasty results. Lots of options for extra flavors with bacon and/or mushrooms being favorites.

Oven Roasted Brussel Sprouts

We used to think that we did not like brussel sprouts, but with this recipe we really like them!  You can also add 1T of balsamic vinegar mixed with 1t of honey to the roasted brussel sprouts and return to the oven for a few additional minutes.

Buttercup Squash Fries

Squash is one of those underappreciated vegetables. On its own, it can be fairly bland and needs some help to taste it up. Lets face it-- most folks would rather have a baked potato than baked squash. To give our butternut squash the opportunity for taste greatness, this recipe goes simple and makes squash fries. The key is removing the moisture to allow the fries to crisp up.

Most Excellent Homemade Pasta

What makes this homemade pasta "most excellent" (in the words of Bill and Ted)? Using farm fresh eggs is the key. Not supermarket eggs that say "farm fresh", but eggs direct from a farm or homestead. Surprisingly enough, outside of downtown/suburban urban jungles (where small lots and pesky zoning codes get in the way), a surprising number of folks keep chickens and "fresh egg" signs are not just for decoration. In addition to fresh eggs, using '00' flour (double-zero Italian-style) is important as well-- easily available from the online retail-industrial complex.

Fried Rice

I have tried making fried rice for two several times without success (always ending up with way too much rice).  This is the first and best fried rice recipe that has delivered on flavor while actually making a serving for two. If desired, cooked meat can be added to the the rice such as diced ham, shredded chicken or small shrimp.

Matches well with the Beef Satay recipe.
